My mother’s mother was a master at making things stretch. One of my favorite tricks of hers, was how she would left over potato salad from one meal, and turn it into potato salad for the next. Unfortunately both grandma and any resemblance of a recipe left us many years ago. Yet memories of her, and her mashed potato salad inspired me to create this version.
GRANDMA’S MASHED POTATO SALAD
Ingredients:
Leftover mashed potatoes
3 ounces finely chopped onions
5 ounces of pickle relish
10 ounces of Mayonaise or Mustard
Directions:
Place mashed potatoes in a bowl. Add onions. Then add the relish and stir well. Add mayo or mustard until desired consistency and texture are achieved. Stir everything together until very well blended. Chill in the refrigerator for at least one hour before serving for best taste results.
NOTE: Measurements above are approximate, and based on about 2 cups of leftover potatoes. Ingredient amounts will need to be adjusted based on how much potatoes you have leftover. Don’t have any mashed potatoes leftover ? Whip up some instant for a quick, fun side. They work great with this.
