Happy St. Patrick’s Day!! Everyone loves corned beef…. and the cabbage… but my favorite thing is the Corned Beef Reuben Sandwiches and I want my Corned Beef to be smoked! Oh yeah!
Instructions
Rinse the brined Corned Beef, season, and smoke LOW AND SLOW.
To keep it low carb, I used a low-carb pumpernickel buttered and toasted, Swiss cheese, and made my own Russian dressing, sauerkraut, and sliced pickles with a side of citrus cabbage slaw.
Ingredients
Russian Dressing
½c avocado oil mayo
3T sugar free ketchup
1T minced onion
1t hot horseradish
½t salt and pepper
Citrus Cabbage Slaw
½ shredded purple cabbage
Instructions in making your dressing
- ¼c apple cider vinegar
- 1t monk fruit sugar
- Salt, pepper
- Oil
- Dill
- Sliced red pepper
- Sliced jalapeno
- Add ½ shredded purple cabbage
Sandwich Assembly
Buttered low-carb pumpernickel, Swiss cheese, sliced corned beef, sauerkraut… toast. Add Russian dressing and pickles to second piece of toasted pumpernickel.
