Rachel Roberts Recipes: Marry Me Chicken

Married, single, divorced…. whatever you are, this will make a fantastic meal anytime! Make this for your loved one…. or make it for yourself. If you’re a HTown local, you might recognize this dish at one of Houston’s favorite spots – Carrabba’s and the Carrabba’s Chicken Bryan.

It’s very close. It’s what inspired me when I was seven and came home wanting mama to make it for me! Enjoy, my friends.

Ingredients

Marinade

2T Italian Seasoning (I like Phoenicia’s Italian Olive Oil Dipping Mix here.)

1 squeezed lemon

¼c Olive Oil

S n P baby

2t Mince Garlic

Butter Lemon Sauce

1 stick butter (I use avocado oil butter.)

2t Mince Garlic

2t chopped sun-dried tomatoes

2T fresh basil

½c heavy cream

Stuffing

2oz Goat Cheese

2T sun-dried tomatoes

Fresh thyme

Lemon zest

Instructions

  1. Combine Italian seasoning, garlic, s n p, and oil. Place chicken in zip lock bag with marinade. 30 minutes at least.
  2. Med heat, melt butter, add garlic, sun-dried tomatoes, and basil, and ½c heavy cream. Set aside.
  3. Grill chicken both sides…. sear both sides. 10 minutes.
  4. Remove from heat. Butterfly chicken. Stuff w/ stuffing.
  5. Top with goat cheese and sun-dried tomatoes.
  6. Broil till melted.
  7. Plate. Pour Butter Lemon Sauce over.
  8. Serve with pasta because the sauce is that good.
